I think I'll add WindWaker to my list...

It came out at that awkward time in my life when I was 14, hated the shit out of the GameCube, and really despised the "kiddie" direction Nintendo was headed in. I steered clear of Mario Sunshine, Luigi's Mansion, and Windwaker, because I was too cool for that shit. I was playing Sonic Adventure 2 on my Dreamcast and wouldn't have any of it...

But I suppooooose now that I have a Wii, and I'm replaying a bunch of old GC games i missed out on, I will give WindWaker a go. It got really good reviews... Although I'm still too good for Mario Sunshine and Luigi's Mansion...

Wind Waker is one of my personal favorites of all games. Lovely colors, the story is touching, funny NPC's and off course beautiful music.

Paper mario 1000 year door is definitly on my list. The reason I haven't beat it is because I got windwaker while playing it so i stopped to play that. Although I haven't beat Windwaker either so that makes 2 games so far.
I guess the rest of the list would be:
Pokemon Colosseum
Shin Megami Tensei: Devil Survivor
SMB advance
LoZ Four Swords
Quake 3
Pikmin 2
Planetside 2 (<- hope to have time to change this this weekend :) )

Definitely give this one a shot! I'm not a huge FPS guy, but I actually quite like the premise of Planetside 2. Planes are hard as fuck to fly though..

Mario Sunshine and Mariokart Double Dash both receive a lot of crap from people, but they are two of my favorite games.

I've really been meaning to play Pokemon Colosseum. I've also always wanted to play the original pikmin. I have pikmin 2, but I never got acquainted with the first one.

Rather enjoyed Mario Sunshine. I loved the look of windwaker and enjoyed watching my brother play, but I never played myself. It's funny how things change over the years. Back in the day it was my little brother watching me play games, and then all of a sudden the tables turned.
